On a baking tin, lightly coated with olive oil, layer sliced eggplant, mushrooms and tomatoes. Drizzle more olive oil and Italian spices (oregano, garlic, basil, rosemary) on top of vegetables. Top with chunks/medium bits of our Herb Garden cheese. Place in the oven at 350 degrees for 45 minutes. Pair with an Italian Chianti – Delizioso!
